Emperor scorpion eating lettuce?

My boyfriend has two emperor scorpions, one a bit smaller than the other. After putting lettuce in the cage for the crickets, I heard a 'crunching-munching' sound like the lettuce being eaten, I didn't get up to look right away but when I did I noticed the smaller scorpion hovering over the, now, mostly eaten lettuce pile. There's no way the crickets would've made so much sound, but scorpions aren't supposed to eat veggies, as I can't find anything online about this being bad for the scorpion or not I'm asking here. Is this bad? His venom sack has gone from brown in color to white....any information about this is greatly appreciated. Thanx.
